As to how she did it, I still can't believe it myself!!

Strangely she never bothered to invest in any other healing gambits, therefore she had one or two her characters casting Curaja at HP>70% constantly (by level 55 it doesn't drain the MP so fast because there's more of it and she had her lower MP cost licenses). She started by taking out Enkidu, which to me looked harder than Gilgamesh himself, using Scathe and attacks. She never had a gambit set up for the Arise spell either, she just interrupted their commands if someone died.
I think the thing that really ensured her success in the end was not so much how high her level was, but what her level was. She was level 55 with Basch, Ashe and Penelo, and level 54 with Vaan, Balthier and Fran. She started the battle using the level 54 characters, and Gilgamesh kept casting Break, Stop, Disable etc and it did look like the battle could be over. But then I realised that Gilgamesh's moves were based on levels eg. level4 break, level 3 disable, something like that, which basically affects anyone with a level a multiple of that number (a lot of those moves appear in FFVII ^^) so I told her to swap in her level 55 characters, and the spells stopped working- my mum had a free shot at him!
So it all came down to avoiding those level type spells, and Monarch Sword only kills off one character at a time so it's easy to arise them.
