2 sprigs of rosemaryTake the potato and cut the top and tail off and trim into one large square by cut each side.

Place potatoes into a deep tray and season with salt. Melt the goose fat and cover the potatoes with it. Add garlic and rosemary and place in oven for 35 45minutes at 150c.
